A Puff Pancake (also named Dutch Baby Pancake) is also much simpler than regular pancakes. Just blend all of the ingredients together, pour into a hot cast iron skillet or a regular baking dish, and let the oven do the rest. No standing over a skillet for 20 minutes while making individual pancakes!

How to Make an Easy Sourdough Puff Pancake

Keep in Mind:
- Make sure your cast iron skillet is nice and hot. This helps it bake fast and the sides to be nice and puffy.
- This recipe can be made using sourdough discard or active sourdough starter.
- Don’t open the oven door until the pancake has been baking at least 15 minutes. Opening it too soon can make the Dutch baby deflate.
- The amount of butter depends on your preferences. Think about it as adding butter to the top of a pancake…do you like a lot or a little?
Needed Supplies:
- Cast iron skillet
- Blender
- Measuring cups and spoons
Ingredients:
- 12 eggs
- 1/2 cup of sourdough starter
- 1 cup of milk
- 1/4 cup of maple syrup or honey
- 1 tsp vanilla
- 1/2 tsp salt
- 1 cup of flour
- 2-4 Tbsp butter
Instructions:
Follow these instructions if you are baking them right away (no long fermentation time):
- Preheat oven to 425.
- In a blender, add eggs, sourdough starter, milk, salt, flour, vanilla, and honey. Blend until light and fluffy.
- Add butter to a 12 inch cast iron skillet and place into the hot oven to melt. The amount of butter depends on your preferences. Think about it as adding butter to the top of a pancake…do you like a lot or a little?
- Pour the batter over the melted butter and place into the preheated oven.
- Bake for 15-20 minutes until puffed up.
- Serve right away with butter, fruit, or syrup.

- The night before baking, combine sourdough starter, salt, and flour into a large bowl. Mix well.
- Cover the bowl in plastic wrap and allow to ferment for 8-12 hours at room temperature or up to 24 hours in the refrigerator.
- The day of baking, preheat oven to 425.
- In a blender, add eggs, milk, vanilla, and honey. Blend until light and fluffy.
