Sweetened with honey and long fermented with sourdough, this dessert is both delicious and good for your loved ones to consume. How to Make Sourdough Chocolate Chip Blondies

What You’ll Need for Making Sourdough Chocolate Chip Blondies:
- Stand mixer and attachment
- Large mixing bowl
- Measuring cups and spoons
- 9″x13″ baking pan
- Parchment paper
- Spatula
- Toothpick or fork
Ingredients for Sourdough Chocolate Chip Blondies:
- 3 sticks unsalted butter, melted
- 2 cups of raw honey
- 4 large eggs
- 1 1/2 tablespoons vanilla extract
- 1 cup sourdough discard (100% hydration)
- 3 and 1/2 cups all purpose flour
- 1/2 teaspoon table salt
- 1 tsp of baking powder
- 1 cup of chocolate chips
Tips to Keep in Mind:
- Unfed sourdough starter will add a tangy flavor to the batter. I got great results with a starter that had been in the refrigerator, unfed, for about a week.
- Stirring the batter vigorously after adding the eggs will incorporate air into the batter. As the blondies bake the bubbles rise to the surface and help form the crust. If you prefer a soft top on your blondies, you can skip that step.
- The recipe can be halved and baked in an 8″ or 9″ square pan.
- Butter the pan and line with parchment paper. This not only prevents sticking, it makes it much easier to lift the blondies out of the pan.
- Cool the blondies in the pan then use the parchment to transfer them to a cutting board.
- The blondies will keep at room temperature for several days.
Step by Step Instructions for Making Sourdough Chocolate Chip Blondies
Follow these instructions if you are baking them right away (no long fermentation time):
- Preheat the oven to 375°F.
- Butter a 9″x13″ baking pan and line with parchment paper. You can just butter the pan but the parchment makes it much easier to remove the blondies from the pan.
- In a large bowl, combine the melted butter and honey.
- Add the eggs and vanilla and stir until combined then vigorously stir for 30 seconds.
- Fold in the sourdough discard.
- Stir in the the flour, salt, baking powder, and chocolate chips.
- Spread the batter into the pan.
- Bake for 15 minutes, remove from oven, and swirl the batter with a fork to create a chocolate chip swirl throughout the blondies.
- Return to the oven and bake until the center springs back when lightly pressed and a toothpick inserted in the center comes out with wet crumbs. This will take about 15 minutes.
- Cool to room temperature before removing from the pan and cutting into 24 pieces.
Follow these instructions if you are allowing the batter to ferment for at least 8 hours:
- The day before baking, combine the melted butter and honey in a large bowl.
- Add the eggs and vanilla and stir until combined then vigorously stir for 30 seconds.
- Fold in the sourdough discard.
- Stir in the the flour and salt.
- Cover the bowl in plastic wrap and allow to ferment for 8-12 hours at room temperature or up to 24 hours in the refrigerator.
- The day of baking, preheat the oven to 375°F.
- Butter a 9″x13″ baking pan and line with parchment paper. You can just butter the pan but the parchment makes it much easier to remove the blondies from the pan.
- Mix the baking powder and chocolate chips into the batter.
- Spread the batter into the pan.
- Bake for 15 minutes, remove from oven, and swirl the batter with a fork to create a chocolate chip swirl throughout the blondies.
- Return to the oven and bake until the center springs back when lightly pressed and a toothpick inserted in the center comes out with wet crumbs. This will take about 15 minutes.
- Cool to room temperature before removing from the pan and cutting into 24 pieces.
